Ingredients:-Tsp of olive oil-6 oz fillet of Striped Bass-Half tsp of salt-4th tsp of fresh brown black pepper-2 tsp drained capers chopped-Half cup clam juice-1 tbsp fresh lemon juice-2 tbsp unsalted butter-1 tbsp fresh chopped parsley
Method:1. Heat large stainless steel skillet over medium-high heat. 2. Add oil to coat pan.3. Sprinkle the fillets of striper with salt and pepper add to pan skin side up.4. Sauté 4 minutes until lightly brown, turn over sauté another 4 minutes. 5. Remove from pan and keep warm, add capers to pan and cook 15-20 seconds stirring frequently. 6. Add lemon and clam juice bring to boil scraping pan to loosen brown bits. 7. Cook until reduced to a quarter of cup about 3 min.8. Remove pan from heat add butter stir and whisk until butter melts stir in parsley. 9. Serve sauce over fish.
